Baked Egg Muffins

A balanced, healthy meal. YUM! You better believe I scarfed this down after snapping the photo!

If you have never tried baked egg muffins… you must! It is so easy and in my opinion so much better than pan cooked eggs.  You can make more servings without standing over a pan and you could be chopping fruit or blending your morning smoothie while you wait the 12-14 minutes it takes for your little egg muffins to puff up in the oven.

What you need for 6 egg muffins:
4 eggs
6 slices canadian bacon, diced ham or bacon
desired mix-ins

Ideas for Mix-ins
peppers, onions, green onions, cilantro, spinach, mushrooms, tomatoes, jalapeƱos, salsa… just about anything your heart desires

Beat eggs, add mix-ins, heavily coat your muffin pan, add roughly 1/4 cup mixture for each muffin, and bake for 12 to 14 minutes (The more veggies the longer they need. The plain ones will be on the shorter end of the bake time spectrum.) at 350 F (about 176  C) 

Simple. Perfect. You don't add extra milk, cream or fat because the oven creates a puffy, yummy egg without it. (You could definitely use a little milk or cream if desired. I choose not to.)

The kitchen smells yummy and these egg muffins taste divine. There is something about the flavors and  the way they all melt together while baking. I am totally sold on these.
 You can see I like mine FULL of veggies. They taste better that way. But, I must say the ones with egg, ham and cheese for the kids were also fabulous.
 The egg puffs up around the veggies so don't be concerned if your veggies are hanging out on top all naked before you throw these bad boys in the oven.

If you like lots of veggies like me, note that they will need to cook a bit longer than plain egg muffins. I actually pulled my plain ones out and cooked my veggie filled muffins for two more minutes. The veggies add more moisture to the egg mixture.

 Eat plain, serve with tomatoes, salsa or fresh cilantro.
