Old Town Salzburg, Austria

If you have never been to Salzburg, go if you ever have the opportunity. If not, don't sweat it! (Not that you were.) This will be my longest post to date. More pictures than any other post. I just can't help it. We love this place and we are so grateful we were able to go back for the 2nd time in October with my parents. We only spent one day and night here. If you read about some of the other fall adventures we had when my parents came, then you know they only came for ONE week. Not enough time. So the week was packed with crazy fun.

Christmases Past and 2013 Christmas Wishes

Christmas always brings a spirit of giving and a reminder of blessings. I love contemplating the birth of our Savior, Jesus Christ. Christmas is my favorite time of year. I love the music, the decorations, the twinkling lights, the food and most importantly being surrounded by those I love.

I have been reminiscing about Christmases past. I do every year. I have been missing my family, Sam's family and special friends. I think about Sam last year alone in Afghanistan on Christmas. I think of my little brother serving a mission in Florida, away from family. I think of how lucky I have been to have been surrounded by family every single Christmas of my life. I have so many priceless memories. Below are some pictures of Christmases past and our 2013 Christmas card.

We wish you a happy time filled with family, friends, warmth and the true Spirit of Christmas. Make the last few days of 2013 count! :)

Hitler's Eagle's Nest, Obersalzburg, Germany

And yes, another Bavarian adventure that MUST be shared. We visited Hitler's Eagle's nest. And it was so incredible to see! Sam and I had been talking about checking this place out since we moved here 2 1/2 years ago. I didn't know what to expect. One morning in mid-october we checked out of Edelweiss in Garmisch, Germany and headed to Obersalzburg to finally see this place. We drove up and up into the mountains and reached a point where we couldn't drive any longer. There we parked the car and bought tickets to get on a bus. We waited for a few minutes and then took the world's sketchiest ride up and up some more. At some points it literally felt like our huge tour bus was just going to tip right off the cliff.

This Eagle's Nest known as Kehlsteinhaus in German was a 50th birthday present for Adolf Hitler. It took 13 months to build. From what I have heard he didn't use it for that long.

Neuschwanstein Castle, Germany

I find it hard to believe, still, that my life includes so much excitement! I mean, I never, ever would have imagined I would be living in Germany. I never would have even thought about it or quite frankly, wanted it! But, such is life… filled with many things you don't expect. And now that I have the opportunity to live in a foreign country, I am so grateful for it.

So, this is another post about one of the adventures we had while my parents were here. This particular day included a trip to the infamous "Disney Castle." No, it isn't actually "disney anything." But, it is the castle that Disney patterned their "Sleeping Beauty Castle" after. We visited in mid-october and it was about the perfect time with the fall colors and crisp weather. It was incredibly beautiful!

Dachau Concentration Camp, near Munich, Germany

Visiting a concentration camp is never fun. It is sad, disturbing and heart breaking. However, I am still glad I have been able to visit one. This was our second time visiting Dachau. It is near Munich and it is about 2 hours from our house. The last time we were able to visit was before Trip was born. On July 1, 2011 we visited with Sam's dad and brothers. Click here for some different photos and the post on our first experience at Dachau.

The first time I visited, I left in tears. This time I ended up outside with our children most of the time. (Their running around, laughing and screaming didn't quite fit in with the atmosphere.) This visit was a bit easier, emotionally for me (since my focus was on the kids), But still hard.

The Alps, Garmisch, Germany

The 2nd night my parents were here (when they came in mid October) we were already out traveling. We had made it down to Garmisch, Germany. It is a lovely ski/outdoor adventure town that has a fun vibe. We stayed at Edelweiss which is a resort on a military property. But, the property is insane, amazing. It is literally at the base of the Alps. It is a short walk to the trams and lifts that take you right up into the Alps. When driving in we were oohing and awing at the clear, pristine day. We have made this same trip many times and we had rarely seen it as clear and as beautiful as it was for two nights we stayed there.

A Bavarian Adventure- Rothenburg, Colmberg and Lichtenau

In mid October we had two very special, very wanted visitors! My parents came to town. It was a tease because they only spent one week with us. We really had to make every second count. And boy we did just that. We traveled and soaked in every minute we had together. It was one of the best weeks. EVER.

Trip Samuel Turns Two!

Our precious boy turned two a couple of weeks ago. I wanted to have a party for him and make it really special. Last year his birthday fell right on Thanksgiving day. I got him a couple of presents. Sam was deployed. I didn't EVEN make him a cake. He "blew out" a candle that was stuck into a piece of pumpkin pie. That is not a tradition I wanted to keep. I really want him to feel special and like his birthday is his day to feel special and be well taken care of!

Simple Color Activities for your Toddler (ages 2 to 4)

Lemon Passion Cake

Before I share one of my new favorite dessert recipes (which is by no means healthy) can I just say- THANK YOU!!! I felt slightly vulnerable after my last post but that all went away after all of the love and support you have shown me. Thank you, thank you… and thank you for reading our blog! :)

When reading a blog, especially if the blogger is a friend of mine, I really, truly want to know what is going on in their lives. I want to keep connected with them even if we aren’t able to hang out very often or ever! I really want to read something real and honest. So, here's a real life post from me!

Halloween 2013 in Deutschland

For living in a country where they do not necessarily celebrate Halloween… we sure had a lot to do! Parties, trunk-or-treating, dressing up and spending time with friends. All in all, this year was fun. I do have to admit that after Halloween ended I decided that it just isn't my favorite Holiday. Maybe when the kids are a bit older? Everywhere we went Lonydn was scared out of her mind of something. I don't blame her, though. There are some really scary costumes out there. She was talking about the "doctor with the leg" and the "Goodnight-mare" for days after Halloween. In fact she is still bringing them up. Tonight we had an activity at our church and she was beyond excited that Halloween was over so she wouldn't be seeing the "goodnight-mare!"

Happy Halloween (2012)

It's hard to believe last year Sam was in Afghanistan and we were living in Utah with my parents. It was such a blessing for us to be around so many loved ones while Sam was away. I can't tell you how lucky we are to have the families we have. I have been blessed with the most giving, patient and selfless parents a child could ever ask for.  I wish Sam was with us last year. We missed him so much. This year I wish we lived a bit closer to our families so we could party on all the special upcoming Holidays with ALL our loved ones. But, you know what they say… it is what it is!!!

Sweet Potato Soufflé- A Healthy Fall Treat!

I don't know about you but I am always looking for yummy, healthy ways to enjoy fall! There are so many fabulous things to eat during Fall. There are also a lot of things we love and enjoy that aren't that good for us. Because I have been cleaning up my eating a bit over the last couple of months I have some exciting new recipes to share!

Bumble Bee Besties

I have been missing from this blog for the past week and a half or so but I have a really good excuse. My amazing parents came all the way from the good ol' USA and stayed with us for a week. Sam took time off and we had some adventures. I dropped my parents off at the train station this morning and absolutely hated watching them walk away. Then this morning I walked into "their" room and it made me pretty sad. There is a terribly empty feeling here without them. I know I just need to look at the bright side of things. It was HUGE that they even came at all, even if it was for one, very short week. It was a packed week full of beautiful sights, gorgeous weather and most importantly- the best people!

Our Family Fall-ing!

I like to soak it all in. I love the seasons. I love the Holidays. I LOVE my family. I have this fear that I won't remember every perfect moment. That may explain my crazy habit of picture taking. I have been this way for a long time, though. I remember when my first, precious nephew was born. I took hundreds of pictures. My brother-in-law and sister, were concerned, I could tell. My B-I-L thought I was going to make the little guy go blind.  And the tradition continues, my children may in fact have less than perfect vision because of the many times the flash has gone off in their eyes. :) But, at least we will remember every stage of their little, young lives!
These three are, clearly, my everything.

"Witching" you a Happy October!

Starting in September, the German "Blumen" Gardens have had seasonal squashes... most importantly PUMPKINS! They have these gardens ALL over. You can pick flowers or purchase things they grew in their gardens/farms. They leave a big "kasse" (cash) box and you leave money for the things you take. I have gotten two HUGE zucchinis and Lonydn and Sam picked a giant white flower one time. We have also started small and gotten some mini pumpkins and squashes.

We have already been frequenting these places for fun AND because I (of course) had to take photos of the kids (and Sam)! Trip was asleep in the car for this fun photo session. Londyn had a ball all by herself. She rearranged the pumpkins and drove the tractor "all over!"

Buttermilk pancakes that taste good AND are good for you!

I have been trying to eat very healthy. I go through this, I think we all do. Where we are in a good groove. We are taking care of ourselves and we feel great. Other times we slowly slip because we have some fun junk food at a party or during the Holidays. I think balance is key in life, and I will leave it at that.

A 3rd birthday party to remember!

Londyn, of course, turned three last month. As if I haven't made a big enough deal about it. Her birthday was simple and PERFECT. Let me tell you why- It was about HER!

I made the decision that I wasn't going to do too much for her little party. I did a lot more for her 1st birthday party and specifically remember being stressed that day. I recall being so happy when her party was over, the guests had gone home, everything was cleaned up and we could finally focus on her. And what a concept. I mean that is what a birthday is all about, right?

This year, I knew I had to put some work into it and make it special, but I wanted to have the right balance. I wanted to be relaxed and just enjoy my little, growing, beautiful princess.

I am so pleased with how the day turned out.

The morning of her birthday she woke up and was a little shy about the start of the day. I mean she had been looking forward to her special day for at least a month before it came. Everyday she would talk about her birthday and what she wanted. Every store we were at she would ask for special things… for her birthday of course!

The Tongue of Angels

I feel slightly compelled to write on this subject. As a mom, as a woman, as a wife. There are a lot of responsibilities that go a long with all of those callings. Tonight as I read an exceptional talk written by Jeffrey R. Holland, I just sad and cried. I am throwing all pride aside, feeling embarrassed as I type. I cried because I am so far from perfect at what I am trying to do. First and foremost, my responsibility as well as priority is to be a lover, a comforter and a "happy place" for my children and husband. I feel that I do very well at my "job" quite often. But, too many times I fail. Too many times I find myself feeling far too incompetent to do this job well. I want to be perfect. Who doesn't? But, I really just want to be perfect for the ones I love.

Free Inspirational Lighthouse Download

While doing part 2 of our Cancun vacay I thought… "I should really use this lighthouse picture for something." And so, here you have it-- a favorite quote of mine on this awesome lighthouse picture I took in Cancun.

Fiesta Americana Grand Coral Beach, Cancun, Mexico (Part 2)

Let's just say that part 2 of our Cancun adventure is the better part! Not because our site seeing wasn't incredible. We loved every second of the whole trip. BUT, because I am focusing on the resort we stayed at in this post.

Fiesta American Grand Coral Beach.

A mouth full? Yes! But, worth having to repeat it all week. (For transportation, when you meet cool new friends, etc.) Go to Cancun and stay in this resort. It is a bit pricey but if you are going to do it… go big! (That's what we say around these parts.) This was the most incredible hotel I have ever stayed in. The food. Ohhh… the food. I can't hardly begin to explain HOW AMAZING the food was. If you love Mexican food. They have some of the best…maybe the very best I  have ever had. The breakfast buffet, the dinner buffet, the restaurants- all incredible! This hotel is located at the very tip of the Yucatan peninsula. It shares the tip with a couple of other resorts. It was within walking distance of some other restaurants and some shopping.

Take a look at some of our pictures and if you are looking to plan your dream vacay you may want to look into this resort.

This photo was taken at a restaurant away from the hotel. He's my hunny. How I love that man.

Xel-Ha, Isla Mujeras & Tulum- Cancun, Mexico (Part 1)

Last Christmas, in 2012, Sam was away. It ended up being a tough day for me. But, Christmas morning I was able to talk to him (as he was going to bed in Afghanistan) and he told me of a surprise. Now, this was a surprise that he had done a lot of work on. He would think of this surprise often and it would help get him through his days because he new soon enough he would be spending a week in paradise, alone with… Mwaaaaah.

She turned 2 in 2012

I know, I know. I will make this quick. I decided to do a post on Londyn's second birthday. It was sweet and simple. Since Sam was in Afghanistan I didn't feel motivated to do a big party. We spent the day with family in Utah and my little sister and Mom pulled through and gave her a little mini bash. My sister did the balloons, cake, everything… it was at her house in Provo.

Londyn still plays with and loves the Mermaid her Aunt Jade and Uncle Josh gave her and she still wears the pants my little brother gave her… and a lot of the clothes my parents gave her that day. Amazing how some of it lasts.

Londyn and Trip in Milmersdof

The other day I took the kids out to do Londyn's 3 year photo shoot. I have been really good about doing photo shoots of her around her birthday each year. Trip, on the other hand, not so much. Because he is a Winter baby it is not as much fun doing photo shoots because it is usually snowy outside. This year, however, I hope to do a really fun shoot in the snow for his birthday. They are both old enough to stay out in the snow for a bit so we should do something special. Snow, pine trees, sleds, maybe some outdoor lights?! The options are endless.

Last week I took the kids to Milmersdorf. It is a neighboring town a few minutes from ours here in Germany. It is the home of one of our favorite "compounds." As you can tell from the photos it is a beautiful Bavarian countryside.

Soothing Honey-Lemon Tea

Can I just say that I have been sick for over 6 weeks!? I have started to get better a couple of times but I can't seem to get healthy. I took another bad turn this weekend and I am currently trying to get feeling better… AGAIN! When we were in Berlin a couple of weeks ago I discovered one of my new favorite things. I have gone through so many lemons lately. In the last 24 hours I've used 7 lemons and one lime… and LOTS of honey! If you would have asked me a few weeks ago I would have said that honey is not my favorite flavor. I am now a huge fan of it and it's soothing nature.

Celebrating Three Years of our Little Londyn!

Londyn Skye, our precious first born, will be turning three this weekend! You have to know how emotional I am over here. I mean, how do you function as a Mom?! It's quite near impossible in every way. But, especially as you watch your children grow up. They just keep getting better and better as they grow older, but I STILL want to freeze them. I don't want these times to end. My heart often hurts as I think about the time when I will leave them at school for the first time or the time when they would rather go hang out with their friends than be with me… their dorky mom. The dorky mom who is sitting here crying crocodile tears as she types.

Berlin, Germany

Just about two weeks ago we made a trip to Berlin. It was last minute planning and I sort of just picked Berlin as our destination out of thin air. I am SO GLAD I DID! I seriously LOVE Berlin and I can't wait to (hopefully) go back. There is something so magical about a city so rich with history. The history is hard to take in as some of it is tragic, but still, it was so neat to be there.

Click here to see a slideshow of our favorite photos from the road trip.

Some of our favorite sites were:

Brandenburg Gate- This Gateway was built in 1791 and it is a very popular site. It was a place of major celebration when the wall finally came down in 1990. In 1987, President of the US, Ronald Reagan stood at this gate and said, "General Secretary Gorbachev, if you seek peace, if you seek prosperity for the Soviet Union and Eastern Europe, if you seek liberalization: Come here to this gate! Mr. Gorbachev, open this gate! Mr. Gorbachev, tear down this wall."

Our Family at Tropical Islands

We spent a little less than 24 hours at the Tropical Islands Resort here in Germany. It was quite the experience. Looking back, honestly, I would have spent the entire weekend in Berlin instead of splitting the weekend up. (I just fell in love with Berlin. The city and the history. Blog post to come on Berlin.)

However... I did enjoy our stay here and the kids especially loved it. It was a child's dream. There was lots of water and a HUGE kiddie area with many slides, lots of climbing and even a restaurant geared just for the child right next door. WE had slushies, lots of food and candy and we stayed up late together. There were all sorts of restaurants and the Indian food was quite good. They had a very extensive candy shop and we made a few (too many) trips there! All in all it will be a very fond memory in my book.

Tropical Islands Scenery (Krausnick, Germany)

We had the opportunity to go to Tropical Islands Resort. It was an amazing place and definitely awesome to see something so unique.

Tropical Islands is a resort in Krausnick, Germany. It is less then an hour from Berlin and only 4 hours from our house. Tropical Islands is housed in a former cargo-lifter airship hangar. The original hangar cost about 78 million euros to build. When it was no longer needed for it's original purpose it was sold for 17.8 million euros and made into an indoor tropical "paradise." It is complete with beaches, shopping, restaurants, entertainment and lots of fun for the kids. There are beautiful accommodations and even tent camping right on site. Our room was one of the nicest hotel rooms I have stayed in (in Europe). The restaurants were high quality and the breakfast buffet was (again) one of the biggest and best I've had in Europe.

spectacular. It is definitely one of my new favorite cities.

A Happy Family (Free Printable!)

Family. Seriously. The best. I am so lucky to call these three family. We took these pictures over a year ago. We wanted to capture some memories before Sam deployed. I hadn't seen these in a while and I was looking back at them a couple of days ago.

Good Day to You! (Free Printables!)

There is something I absolutely love about mornings. Sometimes the morning is quiet and peaceful. The air is crisp and cool and I feel refreshed (like I said... sometimes). There is something about the night time. A time where we are to sleep, rest our usually weary bodies and renew ourselves for a brand new day. To me, it seems symbolic of something greater. But, one thing I do know is-- it is a blessing. A new morning. Another chance to do good. I have struggled with a concept for a long time. It is the concept of slowly chipping away at something. Working hard for or on something. Allowing yourself to be okay with the fact that we can't have everything now. Somethings have to wait until tomorrow. Some results don't come over night. As I have grown older and thus more wise (smile), I have learned that I can start again and again and I can do little by little and there is nothing wrong with that.

Happy Sabbath and a Free Personal Progress Chart!

Today was another good day. We made some new friends. They are a super cute couple. The wife is from South Jordan, Utah and the husband is from here in Germany. He served a mission for our church here in the Ansbach area. We were able to hang out with them for a couple of hours today. Let's just say they are kind of amazing. He is getting his PHD in medical engineering, she, her masters in nutrition. She served a mission for our church in the Ukraine, speaking Russian. So, let's get this straight. She speaks German, Russian AND English. Smarty pants. It is fun to meet people that inspire you.

I designed this chart for the young women in our ward (church) to track their Personal Progress goals. I enjoy working with the young women and I also enjoy using my creative skills. So, I put the two together and created this...

Saturday Showers

Happy Saturday! Today was a great weekend. We had a "hail 'n farewell" for Sam's unit here at the beer garden. I made 110 ten snickerdoodles and passed them all around. I even gave a bunch away to lots of Germans I didn't know. Half the beer garden was laughing about all the cookies being passed around. One elderly German lady ate 1, then another and then asked for a 3rd. About an hour later Sam brought the cookies to their table and she took THREE more! Apparently the Germans love snickerdoodles. They don't really have cookies here so it was a treat a lot them enjoyed. I loved being the cookie lady. It was worth all the hours it took to make the tripled batch. (I had no idea how much more work a tripled batch would be!!)

Homemade Greek Yogurt- it's a cinch!

Here in our house we are absolutely crazy about smoothies. Green smoothies, to be more specific. I have been drinking them for years but now my husband literally doesn't go a morning without them (Well, okay, maybe 1 day a week he will skip).

16 months in 6 minutes

Well, it might take you a little longer than 6 minutes to read, but you get my drift.

Sometimes life gets a bit overwhelming. Even when you have all the help you need to get through some difficult times, sometimes you still can't do everything you want to do. (Mmm hmm, blogging.)

Catching up on a blog can be a lot of work. I have chosen to make it simple. Here's what we've missed in a nutshell. (From present until way back when.)

5 Years of 4ths

Happy 4th of July 2013 (from Katterbach, Germany)
The fourth of July is one of our very favorite days of the year. The kids and I were lucky enough to celebrate the holiday in the good ol U S of A last year with family. My husband on the other hand hasn’t celebrated a 4th in the states for a while now. He is incredibly homesick for a good old fashioned fourth. Next year he will most likely be out of the country again but if by some little miracle he isn’t we are going to celebrate big.

Neuendettelsau Pool Day

This pool is awesome and it's only about 5 minutes from our house! Most of it is indoors so we don't even have to lube up the kids. There are a couple of areas where you can swim through to the outside if you need some vitamin D. There's a huge water slide and no one is there to monitor it so we can take Londyn and Trip over and over again. They have this kiddie area that the kids love. This day I decided to break out the camera. Sam was annoyed. He was actually splashing me (and the camera) with water!!! Sometimes he wishes I didn't have a nice camera, that way I wouldn't be in His, Londyn and Trip's faces all the time. (Tough luck, babe.) In 20 years maybe he'll thank me.

Para-droppers in Aviano, Italy

Last week Sam went to Aviano, Italy to fly some troops around and drop them out of the sky. They dropped over 1600 dudes... both American and Italian soldiers. The week was a success... mostly because they ate seriously amazing Italian food every night for dinner! :)

Puddle Love

This year summer came late. And I mean very late. There were weeks where we didn’t see the sun, and truthfully I think a lot of us wondered if it would ever come. We skipped spring, we didn’t see flowers for a long time and the crops are a couple of months late. Seriously. Our landlords didn’t get their usual business at the Beer Garden and we were worried for them. (Most people don’t come out when it’s so rainy.) There was flooding all over Europe and there were even some deaths related to the floods. At one point southern Bavaria had over 20,000 emergency workers battling the floods. Sooo... do you believe me? We've had LOTS of rain.

Our Family

A family of 6, one puppy and 6 chickens! We are in Colorado Springs and enjoying (almost) everything about it. (I could do better without so much wind!) One of these days we will get pics up of Gertrude, Goldie, Flower, Red, Blanche and Blossom! (The chickens!)

We are a family of four. We currently reside in Bavaria, Germany and our life is an adventure. This blog is how I hope to share our life.
I'm totally in love with this guy. I'm the luckiest. I think he might like me too.
I'm married to an Army helicopter pilot. This was at his welcome home ceremony where Londyn followed him around and simply would not let him go. I didn't want to let him go either. 10 months is too long to go without daddy (or a husband)!
This is my amazing, absolutely perfect husband. And no, I am not just saying that. He really is fantastic in every way. I couldn't have dreamed up a better guy. In 2008 I eyed him at a slow dance party for one of my friends. (Shout out to the amazing Danielle... if you read this!) I thought he was super cute, but would never go up to a guy. Duh. I came home and told my roommates about him. I didn't think I'd ever see him again. The next morning the most dreamy guy showed up at church. The rest is history.

Our precious angel, Londyn. She is spunky, sassy, and sweet. She knows what she wants and she is extremely smart. She reads many books and knows a lot of the words verbatim. She likes to count, sing, dance, and do art. She is kind and loving but it wasn't until just recently that she finally started cuddling with us.

To view some special posts about Londyn check these out!

Our little sunshine, Trippy. He is the sweetest thing. He has the kindest voice you've ever heard. He sings songs, speaks incredibly well and he is a little guy on a mission. He can say his ABCs and count. Everywhere we go people make comments about how he's in charge. (Although, if I am being totally honest, Londyn and Trip both run the show around here.)

Yes, we have a pet and Londyn named it Gaga. I begged for him for months and finally Sam gave in. He's the only fish I've ever had that didn't die within the first week or so. Seriously. He's hardy and he eats a TON. So, I am a little bit proud of him... and me for not killing him... right away, at least. He's been with us since July 2013.

There you have it. We're a family and we're happy. We're blessed and blessed... and even more blessed.
