It's her party!

Londyn had a birthday bash. We had so much fun and had so much support from friends and even a little bit of family out here.

In the midst of lots of birthday prep (over the past few weeks and on), Londyn learned to take off her diaper.  It was a week of firsts for her. She had her first olives, first vinegar soaked cucumbers (which she loved), first time taking off her diaper, first cake, first birthday, etc. etc. I also found her 4th molar and another tooth. She is growing and changing so much everyday.

Twas the night before her Birthday!

On the night before Londyn's birthday we learned that Sam would not be able to attend her "family party" which was to take place on her actual birthday and include me, Sam and Londyn. He had to fly and he wouldn't be home til later. We had a few presents for her and she had gotten a few things in the mail so we decided to have her open her presents a day early.

Welcome to the Jungle, Mallorca, Spain

This morning I was laying in bed and I realized I had forgotten to include some of our pictures in the Spain post. We went to a fabulous Italian restaurant right on the boardwalk looking out over the beach and the water. It was lovely. It was called "Welcome to the Jungle." No joke. They had large animals everywhere. The super nice host dragged this large bird all the way to Londyn so she could sit next to it. Hilarious!

Mallorca, Spain

I've mentioned it a few times now, but we went to Mallorca, Spain and it was amazing. Worth a trip for sure.

 Here's our little Londyn basking in the sun on the beach in Mallorca, Spain. I finally got some adorable photos of this dress that her Aunt Jourdan and Uncle Josh bought her in Hawaii. Londyn was so cute crawling up and down the sand and through the water in this long, flowy beach dress.

Before I get to my next very important blog post I wanted to post a few adorable pics of Londyn (cause I never do). I just uploaded all the videos and photos off my phone and these are some of my very favorites of the little angel.

 Londyn is an animal lover. She laughs out loud when dogs wag their tail, or kiss her in the face and she always gets so excited when she sees animals. Whether it is the horses on our street, cows, birds, or all of the many CATS we have in our neighborhood, she is smitten. It must be kitten season because there are little kittens all over this place. To be honest it sort of grosses me out, but because she loves it so much, I think it's kind of cute.

Sunday Roasts and Non-Dreaded, Non-Manic Mondays

I used to sort of dread mondays. It was work, school or early morning seminary. Back to the work week grind. Well, now that I am a stay at home mommy of an 11 1/2 month old, I don't dread mondays. Maybe I will never dread mondays again or maybe one day when I have lots of school aged children or I get to work again (I miss it) the weekend ending will be bittersweet. But for now, I only dread mondays because it means sam isn't around all time.

Yesterday's Fun & A Really Good Reminder

Just incase some of you were wondering what we did yesterday. 

Peach Monster

Londyn loves peaches soooo much! For the past week she has eaten at least one peach per day. Yesterday I cut the first half of her peach into chunks like I usually do. But, occasionally I will help her eat her fruit whole (bananas, peaches, apples, etc) So, I started helping her eat the second half and of course she REALLY wanted to do it all by herself. She turned into the peach monster after only a few short minutes of attempting to eat the peach all by herself.

31 lost

31 lost, 31 unwanted visits, 31 doors receive that dreaded knock, 31 families with shattered hearts, 31 pairs of boots lined up with rifles and dog tags and helmets, 31 comrades remembered and grieved for, 31 funeral services, 31 names on newly made grave markers, 31 empty places at the table, 31 souls who gave all, whose lives leave a void...my heart aches for the families of these soldiers.

We have been deeply saddened by the helicopter crash in Afghanistan yesterday. My heart aches for the wives, husbands (if there were any), children, mothers, fathers, brothers, sisters, Grandparents, Aunts and Uncles of these fallen soldiers. It particularly hits home for us since the helicopter that went down is the same one sam flies. And of course for me, because I don't ever want to be the wife that gets that knock on the door, or that phone call with the devastating news that 31 families received this weekend. God be with the families of these soldiers and grant them the grace to get through this trying time. 

I am so thankful for those that serve our country. America is truly an amazing place. 

Sabbath day Slide

Today was a quiet and relaxing sabbath, as usual. After church Londyn went down for a nap, Sam made   Yakiniku (an amazing sweet asian meat dish served over rice), we ate til we were stuffed then took a sunday naps ourselves. We were able to take Londyn to the little playground on the property we live on and then we went on a relaxing walk around our beautiful town. The weather was perfect and we are looking forward to a full week of nice days with great weather. I love Sundays with my little fam.
 Londyn is having a hard time putting her feet in the grass. Left foot flying high as usual. Love her.

 Oh my, she LOVES the slide. Fearless as usual... she scoots herself all on her own til she starts sliding down. adorable.

22 weeks pregnant

A little update on the pregnancy...

When we had our doctor's appointment on 7/21 we were supposed to find out if we were having a boy or girl! Well the little sucker had it's legs totally locked for the second doctor's appointment in a row. So, we have no exciting updates. The little string bean was already 10 inches long and about 3/4 a pound. MUCH longer than the average fetus at 20 weeks. I have been feeling the baby since I was only about 13 or 14 weeks. About when I Started feeling Londyn. It's really early, but I guess there's just not much room in my little torso. This little one has already found it's way into my right ribs... ugh!!! I've finally started to pop out and actually look pregnant. Hoping for more exciting news shortly!

He has her Heart

This girl is a daddy's girl. She really loves that dad of hers! He has taught her all her "tricks." He is so patient and he works with her over and over again. Over the last while he has taught her kisses, eskimo kisses, "head bonks" (those are like kisses with your forehead), how to fold her arms for prayers, sit up, lay down, give us her "binker," get him a diaper when it's time to change her and I am probably missing lots. When he gets home from work she will crawl up to him and then crawl away because she wants him to chase her and come get her. She lights up when she sees him! 

All these eating/bib pictures crack me up. I ran to go get something and she had turned her bib around like a cape. She won't even keep bibs on anymore so it's a wonder we have so many bib pics. We will cherish these! :)

It isn't very often you get to see Londyn's mouth full of big, beautiful pearly whites. So, here is a special little peak. This girl has 8 regular teeth and two molars. The molar on the bottom is almost all the way broken through and the one on the top is trailing behind. She has been a trooper about getting these molars. 

Pool day in Neuendettelsau... same town we will be delivering baby #2 in. We love that little town and it's only about 10 minutes away. Londyn even looks big in these pictures with her 6' 3" daddy. She is growing way too fast! 

A Day at "Our" Beach

On July 8th we went exploring. We had heard of a great lake near out house. We found it, and it was a happening place! There's a campground, with a playground, ping pong tables, a harbor, restaurant, boat rentals and more. But, best of all it had a little beach... a beach of our very own, right near our house! We had a hay day... well, especially Londyn. She was so brave in the cold water. She kept wanting to crawl deeper and deeper. She was eating sand and trying to lap the water. Gross, I know! 

 I love these pictures of me and Londyn (above) because they show how big she is. Sam always makes fun of me because I am a shrimp. She will pass me up in no time!
 Don't mind how ridiculously white I am. Bad, I know. If only there was a tan button I could click in iphoto. 
 I was pretty paranoid because there were little mini waves and this child is fearless. 

 Splashing away without a care in the world! Thank goodness we have a nice camera. I love how it captured the little splashes.

 We had a really hard time getting her to look up so these few shots we got were so lucky! 

I wish it wasn't supposed to rain this weekend because we could really use another day at the beach!

Here's to our Health!

I sort of have a problem these days. I am always thinking about food! I decided to give up junk food for this WHOLE pregnancy... yeah I know, wishful thinking. BUT, I have done pretty well. I have had some junk here and there. And when I was feeling really sick when I first got to Germany I gave up on everything and ate whatever sounded good (since nothing ever sounded good)! But, for the last little while now, I have been back to eating much healthier and hardly ever slipping up! Because of that I want donuts everyday, boxes of Sees candy, ice cream, etc. But, I feel so much better when I am eating well. 

 I started a little while ago drinking these green smoothies. They are jam-packed with amazing things and the best part about them is if you are nursing or pregnant or just anemic they have lots of iron and lots of vitamin C to help break down the iron. I like them a lot. 
the Recipe:
1 large handful of spinach
1 banana
1 apple
1/4 cup water or 100% apple juice
From here you can add whatever you have on hand, I always add:
a handful of frozen strawberries (Vitamin C)
1 kiwi (more Vitamin C)
anything else I have that would be good (peaches, blueberries, mango, etc.)
I also add a few ice cubes because I like it extra cold and thick!

Ever thought of putting citrus in with your roast? This roast had the most delicious flavor to it. The recipe called for one whole orange and one whole lime. You juice the citrus over the roast and then you bake or cook the roast with the peels. It also called for an onion quartered. The onion was so soft and tender.. I kept sneaking pieces of plain onion! The recipe I used was actually for a pork roast but I just cut this into little pieces for Mexican tacos. 

I found the recipe on the cooks illustrated site. Www.cooksillustrated.com is such a good website! You have to pay an annual membership fee but they have a two week trial too. I just used the two week trial and waded through the recipes and saved the ones I wanted, then cancelled. I have so many cookbooks and there are so many good free websites out there so I didn't think I would use it enough... but it was worth taking the time to find some fun new recipes to try!

Today I wasn't sure what to make for lunch and then I had this great idea! It was soo yummy so I thought I would share it. I made a pizza that sort of tasted like a "California Club!"

1 piece whole wheat flat bread
spread mayo (just a little thin layer) all over the top
shredded cheese (I used plain cheddar)
little bits of ham ALL over (Carving Board- Oscar Meyer is thick and tastes like Easter ham!)
bake until slightly bubbly
After you take it out of the oven cover it with chunks of fresh tomato, avocado, salt and pepper

So easy and so GOOD!
